Almond Biscuits


Almond biscuits are one of my favorite Maltese sweets, and I remember as a young child my mother would whip these up in no time, ready for those unexpected visitors on a Sunday afternoon.
These biscuits are quick and easy to make, even a beginner can't mess this recipe up.





INGREDIENTS

4 egg whites
25ml Almond essence
1/2 kilo caster sugar
1/2 kilo raw almonds (crushed)
8-10 tablespoon self raising flour
Rice paper

METHOD

Using a mixer blend egg whites till frothy.
Slowly add sugar and mix well.
Add almond essence, and raw almonds. Then slowly add flour spoon by spoon.
Place small amounts of dough on rice paper and place an almond on top of biscuits.
Bake in hot oven on 180 degree Celsius for 10-15 minutes.

Thanks for the recipe. Just like my mother used to make for us as children all those years ago. Now Im making them for my family. And yes they all love them. A great way to honour the best Mum in the world.
